Blueberry Spelt Muffins

Ingredients

  • 2 cups spelt flour
  • 1/4 cup almond meal (optional)
  • 1/3 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 1/4 cup olive oil
  • 1 cup fresh or frozen blueberries
  • granulated sugar for sprinkling

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Line a 12-cup muffin tin with paper baking cups.
  3. Mix together the spelt flour, almond meal, sugar, baking powder, and salt.
  4. In a separate bowl, whisk together the egg, milk, vanilla, and olive oil.
  5. Pour the liquid ingredients into the dry ingredients and mix until blended.
  6. Gently fold in the blueberries.
  7. Spoon batter into each muffin well.
  8. Sprinkle tops of muffins with granulated sugar.
  9. Bake for 15 - 20 minutes.
